An exquisite, dark-amber vinegar from the prestigious Bodegas Valdespino, nestled in Jerez. Made from Pedro Ximénez (PX) sherry, this vinegar is matured in oak casks, offering a harmonious blend of sweetness and sharpness. Rich notes of dried fruits—raisins, figs, subtle molasses—merge with balanced acidity, creating a complex and indulgent flavour profile.

Tasting notes & uses:

• Elegant enhancer: Drizzle over fresh strawberries, roasted figs, or vanilla ice cream for a refined dessert accent.

• Savoury seasoning: Stir into pan sauces for game or duck, or add depth to salad dressings and marinades.
