Poon's London Extraordinary Chilli Oil, 125g

Described by judges as having “a terrific aroma… a delicious savouriness with smoky notes and a depth of flavour given by the black bean”, this aromatic chilli oil is as addictive as it is versatile. Grace Dent calls it “wildly addictive, not overly fiery chilli oil… I’ve been buying it in bulk”.

Infused with the intense flavour of salted black beans, this recipe was originally made by Bill Poon for friends and family who would send empty jam jars to be refilled. At the suggestion of Helen Goh from Ottolenghi, it was bottled for wider enjoyment and has since become a cult favourite among food lovers.

Unusual in its use of salted black beans, it offers a depth and intensity far beyond heat alone. Drizzle over noodles, rice, dumplings, dim sum, fried eggs, pizza, or roasted vegetables. Stir into hummus, pasta, sauces, marinades, salad dressings, or stir-fries.

Ingredients: Rapeseed Oil (64%), Water, Salted Black Beans (Soy), Ginger, Garlic, Light Soya Sauce (Water, Soybeans, Salt, Wheat Flour, Preservative (E202)), Sugar, Crushed Chilli (1%), Salt, Birdseye Chilli (0.8%).
