I can’t claim to have invented risotto, but I will say that this particular version has become something of a staple in our house. There’s just something about its creamy texture and gentle, comforting flavours that feels like a hug in a bowl. It’s springtime in essence—bright leeks, sweet peas, and just enough butter to make it rich without being indulgent.
And, if I may, the ultimate endorsement: this risotto is one of my one-year-old son’s absolute favourites. Now, I love the little chap dearly, but I will not sugar-coat the fact that he is an extremely discerning diner. He approaches every meal with the meticulous scrutiny of a Michelin inspector, so if he likes it, you know it’s passed the test.
The great thing about risotto, I think, is how forgiving it is. People will tell you that you need to stir constantly, but honestly, life’s too short for perfectionism—especially when you’ve got a little one tugging at your trousers or throwing peas at the wall. A bit of butter here, a splash of stock there, and somehow it all comes together in a symphony of creamy deliciousness.
The bacon adds a lovely smoky depth, while the red onion gives a pop of colour—because let’s face it, food should be as lovely to look at as it is to eat. Whether you’re cooking for yourself, a fussy toddler, or just in need of something comforting, this risotto is as close to fool proof as they come. Enjoy!
